Thai Courgette Soup
While I’m not getting too bogged down with the whole new year new you extreme healthy eating malarkey, I am going to TRY to be a bit better with getting my 5 a day. As well as this, I find myself going out for lunch most of the time which is usually barely average, full of crazy people in a hurry, and costs me lots of money every week. So, why would I want to continue doing this when with just a bit of organisation and time I can have a lovely tasty healthy lunch for less than half the price! Soup is so quick to make, and you don’t even have to worry about how pretty everything is chopped because it’s all getting blended!
2 courgettes, peeled
1 small potato, roughly chopped
1 onion, chopped
1 garlic clove
2 heaped tsp green curry paste
1/4 can coconut milk
1 stock cube
Heat some olive oil in a large pan and fry the onion, potato, garlic and ginger on a low heat for 5 mins.
Add in your courgette, curry paste, stock (in 500ml hot water) and coconut milk. Simmer for 15 mins. Blend.
I like to finish this with a good dash of soy sauce and the juice of a lime. It really can’t be more simple than this!
