Mediterranean Style Fish Stew

Last week I went for a walk in Howth and I just couldn’t resist popping into Doran’s along the pier for some fish for dinner. The minute I walked in I felt like a kid in a candy store- so much fresh fish to choose from I didn’t even know where to begin! For the rainy miserable day it was I thought a fish stew would be nice. I bought clams, mussels, prawns, and monkfish.I find monkfish is a really good option for stews, curries etc as it is quite meaty and doesn’t fall apart like other fish would be prone to. I also bought a few oysters to eat while I was cooking. All of this came to 19 euro.

Ingedients:

Fish (you decide!)

Tin of chopped tomatoes

2 glasses white wine

2 cloves garlic

2 tsp basil pesto

Method:

This could not be simpler. Bash the garlic and fry for a minute in some olive oil. Add wine and simmer for 2 minutes. Add tomatoes and then the fish. Cook for about 15 minutes or until fish is cooked.

I served this with some fresh buttered bread- absolute heaven!
