Coconut Lime Cupcakes

I find it hard to find good quality shop bought gluten free goodies so from now on I have decided I’ll be making my own! These turned out very well and I avoided dryness that often comes with gluten free cakes by drizzling with some lime syrup after baking.

Ingredients:

125g butter

125g castor sugar

75g desiccated coconut

fine zest of 1 lime

2 eggs

150g gluten free plain flour

1/2 tsp gluten free baking powder

Lime Syrup:

Juice of 1 lime

3 tbsp castor sugar

Frosting:

75g butter (softened)

175g icing sugar

1 tbsp milk

zest of 1 lime

desiccated coconut for sprinkling

Method:

Preheat oven to 180°C. Line a 12 hole fairy cake tin.

Mix butter and sugar in a large bowl. Add the grated lime zest, coconut and eggs and mix.

Sift in flour and baking powder and gently fold in to avoid losing the air.

Divide between paper cases and bake for approx. 10 minutes.

To make the lime syrup mix the juice of 1 lime with the icing sugar in a bowl and microwave for 1 minute. Drizzle over the cupcakes while warm.

To make the icing combine all of the ingredients in a bowl and whizz. It’s as simple as that! I usually forget to take my butter out of the fridge in advance so I just pop it in the microwave at its lowest setting for a few seconds to soften. Make sure the cupcakes have cooled before icing. Decorate with desiccated coconut or lime zest.
